This apple fell far from the tree when it comes to my sweet tooth. My mother was a sweet woman but she didn't care much for sweets. I remember going to the movies together, I would always want candy and she'd always have popcorn. I'd save room for dessert at dinner time and she would have a second taste of her favourite part of the main dish.
As a keen baker growing up, my sweet treats were lost on her. She would smile and say "those look delicious, who get's them this week?". This never bothered nor stopped me. I knew she loved my creativity and my friends benefited greatly from my labour of love.
What could I make to honour my memories of her and satisfy her once salty taste buds? It came to me at once, without question.
Savoury Old Cheddar scones, adorned with chive clotted cream, crunchy cucumber slices, tender shavings of smoked salmon and spicy sprouts. Strong and confident. A classic, just like her.
Joy Marie would have been in heaven eating this, in fact I believe she is!
