Every direction of my life leads to or has been lead by an inspiring, talented and present woman.
Eunice Lauritzen loved beautiful things. She grew up poor on a farm in Mission, BC. She lived through the depression and two world wars. She was from an era that preceded our current disposable consumer culture. She took care of what possessions she did have and as a result she kept and used these things for years.
Although I will never have the chance to meet Eunice, I feel connected to her. I understand her love of all things beautiful and the desire to maintain that beauty. That is probably why her granddaughter and my dear friend Diane Thompson decided to pass on her stainless steel cake knife to me. She must have felt that we are kindred spirits.
May the elegance of the knife continue to be the inspiration drawn upon to create delicious cakes for generations to come.
